This is a wonderful video that shows and discusses natural winemaking at Lagarette. It's all in French, but even if you flunked French class like I did (okay, I didn't flunk but I didn't impress anyone either), it has subtitles. They talk about creating their wines through monitoring, tasting, and listening. Yes, that's right. They listen to the vat. Hmm...?

To grow, to produce a great "natural" wine is a significant act. It is a kind of production, but it is also a sign, a way of recalling that producing wine without phytosanitary products or chemicals, is above all about respecting the health of consumers, respecting biodiversity, the environment, Nature.
