The Wine Route of Israel
For those still wrestling with the wine versus passover issue right now, there's a book out that might have at least a few answers for you, The Wine Route of Israel by Yaron Goldfisher and Eliezer Sacks. Currently it's available at the Judaism.com web site and published by Cordinata Publishing House, 2006:

The Wine Route of Israel provides its readers with a panoramic and comprehensive overview of Israel's wineries, wine history over generations, growing regions and vineyards. Israel's Wine Route is divided into eight geographic regions, from the heights of Mt. Hermon and the Upper Galilee in the north down to the Arava and the Negev Desert in the south. The books contains information about the vineyards, winemakers, individual features and personal philosophies of each of the 75 wineries, as well as useful information about visiting hours, contact details and how to get there. An illustrated map marking the wineries' locations and the routes leading to them is included.
