Wine Making
by tammy on December 7, 2006

On one bottle, my husband actually managed to chip off a little glass while trying to get the cork out, though I suspect it had a lot to do with that cheesy opener he insists on using. So, yes, I've succumbed to the screw cap. I'm not in love with it, but I say, "Uncle," already.
Vintners still vent about the whole cork and screw cap issues, such as Israeli vintner Golan Tishbi in this article published by Canadian Jewish News:
If it were up to Tishbi, he would use screwcaps in place of corks on all his bottles, but "my customers [would] shoot me, probably."
Currently all Tishbi white wines, and some reds, have screwcaps, a change instituted about two years ago.
Tishbi, 35, who studied wine-making in New Zealand, said that screwcaps preserve the wine the way he made it.
"Cork is natural, it's good... but one out of every 10 bottles is spoiled by cork. With screwcaps you have 100 per cent success.
