I don't notice this with white wines so much, but with red wines, I don't like it when they have been open for too long. I can't tell you how many half empty wine bottles I've tossed out over the year because they end up tasting like my salad dressing rather than the original Cabernet or Pinot Noir.
It's just a damn shame!
Obviously, oxygen is the culprit here. But, maybe I've found an answer to my wine turning to vinegar woes with this handy little wine saver gadget from Williams Sonoma:
Proof that you don't have to be a sommelier to preserve an open bottle of wine, this innovative system safeguards flavors and bouquet for up to ten days. Quick and easy to use, it tightly seals the bottle with a reusable rubber stopper and extracts taste-eroding oxygen. Just insert the stopper into an open bottle and top with the pump. Then push the ergonomic handle up and down a few times; a clicking indicates when the proper vacuum seal is achieved. Pump is 5 3/4" long. Stopper is 1 1/2" diam. and fits a standard wine bottle.
